Just going back to your original question about adding items to menus, that is a function of the Drupal Content Management System which Instant Indicia exploits. You will find a lot of online and printed documentation about Drupal which is not repeated in the Instant Indicia documentation.
Regarding your subsequent questions, the easiest to answer is number 2. What you are describing is the designed behaviour and is intended to help ensure data is entered correctly. The simple work around, if you really don't like it, would be to uncheck the option for client-side validation. The upshot of that is that you will only have errors highlighted after attempting to submit a form and waiting for a response from the server.
Regarding number 3, are your submitted records appearing in the warehouse under Entered Data > Samples? This will tell you whether the problem is with the data entry or the reporting.
Regarding 1, you could switch from a tabbed interface to an all-on-one-page interface in the form options and see how that works. You could also try switching browsers as the way photo upload work is dependent on browser and browser plugins.
In any event, if you are using the download of Instant Indicia 0.8.2 and continue to encounter problems my advice always comes round to updating the iForm module to the latest development version. There are known bugs in the 0.8.2 version which are fixed in the development version.
